Finishing involves the control of beer maturation, the filtration of particulates such as yeast, equilibrium in carbonation, and the packaging, kegging or bottling of beer. Study the science, technology and management involved in finishing beer on a professional scale. Learn the specifications for the equipment necessary to produce high quality beer including chillers, filters, carbonators, centrifuges, aging and holding tanks.

CLASS TYPE:
In-class + web based.
This learning experience is intentionally designed as a combination of in-class and web-based instruction. In-class meetings follow the published schedule. Students are also expected to engage with course content online during the published course dates.
INSTRUCTOR:
Hotz, Christopher
Chris Hotz began homebrewing in 2004. He joined San Diego’s QUAFF homebrew club in 2012, and in 2014 he earned a Professional Certificate in Brewing from the University of California San Diego. A Certified BJCP judge, he has judged for GABF and over a hundred competitions. Chris began working at Ballast Point Brewing & Spirits in 2014 as a quality analyst and became an R&D brewer in 2016. He currently brews over 100 new recipes a year taking care of the beers from brewhouse through cellar and packaging. Outside of work, he enjoys spending time with his beautiful wife, two-year and two daughters.
