The Fate of Food
Featured Speaker: Professor Linda Gardner
What happens to food once you ingest it? This lecture will describe the journey food takes from the
time it enters the GI tract until it reaches all the cells. The talk will continue with a simplified discussion of
the metabolic pathways and hormones of the Fed and Fasting states, which describe how and when
carbohydrates and fat are stored or converted to energy. This information will provide the framework
for determining how nutrient metabolism is altered by diets such as intermittent fasting or the Ketogenic Diet.
Presenter Biography
Linda Gardner is a Registered Dietitian and Certified Nutrition Support Specialist. She earned a BS from the University of Georgia and an MS in Human Nutrition from the University of Bridgeport. As Chief Clinical Dietitian at Sharp Hospital Health Care System in San Diego, Linda managed the Nutrition Department and provided metabolic nutrition support to critical-care and trauma patients. As an adjunct professor, Linda taught Human Physiology for 30 years along with Biology and Nutrition at San Diego Mesa College.
